Cast Iron Bruschetta Baked Brie


  • 1 large brie wheel
  • 3 roma tomatoes (Chopped)
  • ¼ cup of minced red onion
  • ¼ cup cucumber fresh basil
  • 1.5 tbsp olive oil
  • 1.5 tbsp balsamic vinegar salt & pepper to taste


  1. Heat your Oven Brothers wood-fired outdoor oven to 350F
  2. With a fork, poke holes in the top of the brie wheel, without piercing the bottom
  3. Add the brie to a small cast iron pan and place it into the pre-heated oven 
  4. Bake for approximately 15 minutes
  5. In the meantime, combine tomatoes, onion, cucumber, basil, olive oil, balsamic, salt & pepper then toss to mix ingredients (this can also be done earlier in the day for even more flavour!)
  6. When the cheese has softened, remove and top with bruschetta mix 
  7. Serve with toasted bread, pita or crackers
